What’s for Dinner is always lurking in the back of my mind and with so many other considerations and limitations of the three generations in our household, I need a go-to list of easy, make-ahead meals.
This Lentil Soup recipe scores high marks all around.
It’s fast, nutritious, delicious, and it can sit on the stove or in a crockpot to accommodate varying schedules.
Multiply the recipe and it’s even a great Game Day meal for a crowd.
Several grocers offer pre-cooked lentils in a sealed-tight packet that allow you to make this lentil soup in about 20 minutes.
Lentil Soup–gluten free
Trader Joe’s is one store that carries the Steamed Lentils for this recipe. (see photo below)
2 tablespoons olive oil
1 pound Italian hot sausage links, sliced (we use Isernio’s sausage)
1 medium onion, chopped
3-4 carrots, sliced
1 teaspoon ground cumin
1 teaspoon salt
4 cups chicken broth
1-18 ounce package refrigerated Steamed Lentils
salt and pepper to taste
1 tablespoon fresh lemon juice
1 tablespoon fresh cilantro, chopped
sour cream, optional
In a large soup pot, heat one tablespoon olive oil. Add sliced sausage in several batches and brown completely until a nice crust forms, remove from pot.
Sauté onion and carrots in the remaining fat from the sausage (add in additional tablespoon of olive oil if needed). Place lid on soup pot to soften the onions and allow any sausage stuck to the pan to release. Scrape the bottom of the pot.
Add in cumin, salt, cooked sausage, chicken broth, and lentils. Add salt and pepper to taste.
Bring soup to a boil. Add lemon juice just before serving and garnish with cilantro and sour cream.
