Orange Pistachio Cocktail Cookie

A mostly make-ahead appetizer that is freezeable —- slice and bake the day of your party!  Perfect with martinis.  The orange flavor is imparted with orange zest and orange flower water (generally found near the vanilla extract in the grocery store).  See recipe below adapted from Sips and Apps by Chef Kathy Casey.

The appetizer recipes can generally be adapted to gluten free pretty easily as I have done for you with the cocktail cookie.  This would be a great appetizer to serve with a martini bar.  Kathy tells you how to get one set up in Sips and Apps.

Gluten Free Orange & Pistachio Cocktail Cookie

makes 24-30 cookies

Kathy’s recipe calls for roasting raw, shelled pistachios but I could not find any in my store so I went with this version.

1 cup (4 ounces) shelled, roasted pistachios, chopped
6 tablespoons salted butter, room temperature
3/4 cup crumbled feta cheese
2 tablespoons sugar
1 tablespoon finely minced orange zest (from one orange)
1 teaspoon orange flower water
6 ounces Multi Blend GF Flour Mix
4 ounces millet flour
1/2 teaspoon guar gum or xanthan gum
1  1/2 tablespoons whole milk
kosher salt for sprinkling

Preheat oven to 325 degrees for about 20 minutes.

In the bowl of a stand mixer cream butter, feta, sugar, orange zest and orange flower water until light and fluffy.  In a small bowl combine flour and gum. Gradually add the flour mixture to the butter mixture scrapping the sides of the bowl with a spatula. Add the milk until combined then add chopped nuts.

Divide the dough in half and shape each into a log 6 inches long and 1  1/2 inches in diameter. Wrap dough tightly in plastic wrap and refrigerate for 2 hours (or freeze for later use within the month).

Line a baking sheet with parchment paper or spray with cooking spray.

Cut the dough into 1/4-inch thick rounds and place 1-inch apart on baking sheet. Sprinkle lightly with salt and bake for 12-14 minutes until cookies are lightly golden on the bottom and still pale on top.

Cool and serve.
