A Charlie Trotter Tribute

Just one year ago Charlie Trotter closed his restaurant to travel and explore other interests and today we have the news of his untimely passing.

Charlie was a celebrity chef before that term was even coined. I will be eternally grateful to him for supporting my book Cooking Gluten Free! and inspiring other chefs to contribute recipes to the book.  Our goal was simple:  show those diagnosed with gluten intolerance that they can live well on the gluten free diet.  We raised the bar for quality gluten free food and it has made such a difference.

 His first restaurant in Chicago in 1987 pioneered fresh-from-the-market foods, seasonal cooking, and an excellent dining experience.  He was the first to popularize quinoa and the first to bring in an all vegetable tasting menu.  And definately an early adopter to help people who must adhere to special diets.

There was a nice write up in the NYT today where Chicago Mayor Rahm Emanuel said “Charlie’s personality mirrored his cooking–bold, inventive, and always memorable.”

Thank you Charlie for all of your contributions over the years to improve our culinary knowledge and experiences!
