Joseph Drouhin 2011 Chablis Domaine de Vaudon
Wish I had better lighting here but we are eating very late these days!
This meal was a perfect match for the 2011 Chablis from Joseph Drouhin. As we wind down summer I am not ready to make way for fall and find myself opening various crisp white wines to enjoy. This Chablis (Chardonnay) is from Burgandy. It’s dry with mineral notes and a bit of lemon on the palate and a nice finish. It’s a great food wine.
Here is an easy meal that you don’t even really need a recipe:
>Halibut pan-fried in a bit of butter and olive oil with salt and pepper and a squeeze of lemon juice (rinse and pat dry the halibut, in a hot pan -add butter and olive oil, place fish flesh side down and cook 5 minutes per inch thickness of fish then turn fish over and cook another 5 min or so until no longer translucent)
>Brown rice (in the rice cooker) with sauteed heirloom tomatoes in garlic, olive oil, and butter with salt and pepper
>Sauteed kale with carmelized onions, olive oil and a tablespoon of lemon juice added at the end. (I used a half bag of chopped kale from Trader Joe’s and 1/2 medium onion). Cook the onions in a few tablespoons olive oil for 20 minutes or so if you have time to carmelize before adding the kale.
Serve with Drouhin Chablis—it was so awesome I even found myself writing notes so I could have this impromptu meal again!
