Crepes, Swedish Pancakes

Just about every country has some kind of thin pancake as part of their national cuisine.

Last night I was craving the Swedish pancakes I used to make while working at Seattle Pie Co.  The batter is thin and decadent, the filling is turkey, cheese, a little butter and herbs de Provence–probably a little bit French and a little bit Swedish.  They are fantastic!
