Bon Appetit –Quick Dinners

I wanted to see what all the buzz was about with regards to Gweneth Paltrow’s recipes so I picked up the June 2011 issue of Bon Appetit and was pleased to see that she cooks the same way I do in Cooking Gluten-Free! with fairly easy recipes for fresh food that also look gorgeous.  And of course one can’t help to wish to look as good as she does in the kitchen.

I love slow roasted tomatoes but I haven’t used anchovies in a pasta sauce before, she has a simple recipe using those ingredients that I will try this week. Flipping through the pages you will find many quick dinner recipes:

Pan-Roasted Chicken Thighs used in the Butter Lettuce Chicken, and Cherry Salad
(followed by many recipes using fresh cherries)
Grilled Pork Tenderloin with Cherry Salsa
Tabil Spice Blend to use with my gluten free Naan Recipe
Great vegetable recipes
A great selection of shrimp recipes and a lot more

Everything looks delicious and most qualify for a quick dinner–you should really pick up a copy of the magazine!

My favorite find in this issue is the Lettuce Cups with Stir-Fried Chicken recipe.  We love ordering these at PF Changs and with the help of a recipe from She Simmers I am directing you to what looks like a great Thai Sweet Chili Sauce.

Over the course of this week I will make a few of these recipes.  In general I will need to substitute my own gluten free bread crumbs or gluten free tamari sauce for a recipe or two ….. most of the recipes can be made gluten free with some minor adjustments.
